FLAVOUR NOTES
Cardamom, liquorice and pepper with juniper fade into the background. Citrus peel and saffron emerge after a few minutes in the glass, followed by a creamy, slightly piney juniper note with a hint of white pepper that finishes refreshingly long.

The juniper from Macedonia has a characteristic piney freshness. It evokes memories of flush, dense pine forests and has a forward flavour of both London Dry Gin and Wattleseed Gin.
Coriander seeds have a woody forward scent that releases a sweet peppery note when broken open, contrasting with the spicy notes the seeds impart to the gin.
Green cardamom seeds have a flavour not unlike juniper, fresh, spicy and sweet and easy to pick as a heart note of London Dry Gin and Wattleseed Gin.\Whole roasted Wattleseed gives Wattleseed Gin notes of coffee and chocolate - perfect for drinking straight on the rocks.
Madagascan vanilla beans have a sweet flavour and a rich vanilla taste that gives the gins a subtle sweetness.
Australian lemons are sourced directly from the tree in the region. They form the citrus backbone of the gin and blend perfectly with the rest of the botanical family to create a balance between sweetness and flavour.
