Cascara is extracted from the unused husk of the coffee bean from the lush hinterland of the northern rivers and enhances the flavour of this smooth-drinking gin.
Cascara is the sun-dried outer skin of green coffee beans. Although it is made from coffee beans, it has no coffee smell; the aroma is instead of an earthy dried bark with a flavour and sweetness of freshly dried sultanas and sultanas. This is the dried fruit flavour that is imparted to Cascara Gin.
Cascara adds earthy tones of dried fruit to create a warmer, richer flavour. A hint of coffee, a touch of genius. Described as a gateway gin due to the sweet berry and fruit notes, Cascara has flavours of currant, sultana, citrus and vanilla with a crisp, delicately floral finish.
Easy to drink neat on the rocks or mixed with a grapefruit tonic.

The juniper, which originates from Macedonia, has a characteristic piney freshness. It evokes memories of flush, dense pine forests and has a forward note.
Coriander seeds have a woody, forward scent that releases a sweet, peppery note when broken open, contrasting with the spicy notes that the seeds impart to the gin.
Madagascan vanilla beans have a sweet aroma and rich vanilla flavour that adds a subtle sweetness to gins.
Australian lemons are sourced directly from the tree in the region. They form the citrus backbone of the gin and blend perfectly with the rest of the botanical family to create a balance between sweetness and flavour.
Native Strawberry (Olida Gum) has flavours of berries and hibiscus and provides the sweet forward flavours of Cascara Gin. These come up before the juniper to create a gin of more dried fruits, with the juniper and spices coming through behind the sweetness.
