For thousands of years, indigenous Australians have been gathering native foods in the wild without damaging the ecosystem. This approach has also been applied to Green Ant Gin.
That's why Seven Seasons is also about doing things the way they've always been done.
The ants are harvested by hand by the indigenous people. The number of ants that can ultimately be collected is strictly limited.
The nests remain with their queen and juvenile ants to ensure that each individual colony can continue to live without interference.
The green ants are harvested in the windy season (August / September), one of the Seven Seasons of the Australian Aborigines.
In order to maintain sustainability, the Australian government has granted Seven Seasons and the Larrakia people in northern Australia an exclusive licence so that the green ants can be harvested legally and sustainably.
